Kniddelen
A must-try recipe from Luxembourgish cuisine
This traditional Luxembourgish dish consists of small dumplings made from a simple flour dough. Typically served with a bacon sauce or melted butter, they are a real treat for lovers of hearty home cooking and epitomise the simplicity and richness of Luxembourg’s regional cuisine.

Ingredients
for 6 people
- 500 g milk
- 500 g flour
- 2 eggs
- 1 pinch of salt
- 1 tbsp butter
- 100 g streaky bacon
Preparation
Bring a large pot of water to the boil and add a good pinch of salt.
For the dough, first pour the milk into the mixing bowl of the food processor.
Then gradually add the eggs and flour while the machine is running on low speed.
Finally, continue mixing on high speed until a smooth dough is formed.
Form dumplings with a tablespoon previously dipped in the boiling water and place in the cooking water. Allow the dumplings to cook.
As soon as they float to the surface, remove them with a sieve and put into a bowl.
Fry the bacon in a pan with a little butter.
Add the drained Kniddelen to the bacon in the pan and toss. Serve immediately.
